Groundnut oil


Groundnut oil, also known as peanut oil, is extracted from peanuts and is favored for its nutty flavor and high smoke point, making it ideal for frying, sautéing, and other high-temperature cooking methods. It is available in refined, unrefined, cold-pressed, and gourmet varieties, each offering different flavors and cooking properties.



1. Types of Groundnut Oil:


a) Refined: Neutral flavor, very high smoke point, suitable for deep frying and high-heat cooking.


b) Unrefined: Stronger peanut flavor, lower smoke point, best used for flavoring or finishing dishes.


c) Cold-pressed: Retains most nutrients and flavor, lower smoke point than refined, suitable for dressings and dips.


2. Fatty Acid Composition: Rich in monounsaturated and polyunsaturated fats, which are beneficial for heart health. Moderate in saturated fats.


3. Shelf Life and Storage: Keep the oil in a cool, dark place to prevent oxidation. Refined oils have a longer shelf life than unrefined oils.


Choose refined groundnut oil for high-heat cooking and frying to take advantage of its high smoke point and neutral flavor. Opt for unrefined or cold-pressed oil for dishes where a robust peanut flavor is desired, such as in dressings or to finish dishes.
